在柳州有着这样一句话,“不食螺蛳粉,枉做柳州人”。柳州人之所以如此喜
爱螺蛳粉,一是因为其鲜、酸、爽、烫、辣的独特口味;一是因为柳州人自古就
有吃螺的爱好,再加之米粉算是这里的主食,二者的完美结合当然会使柳州人“爱
不释口”了;再者是因为柳州潮湿闷热的气候,人们容易没有食欲,而螺蛳粉的
酸辣劲爽刺激了人们的味蕾,“一筷子通气,两筷子发汗,三筷子下肚整个人就
通透了”。

螺蛳粉为广西柳州著名小吃,位居柳州风味小吃之首。它由柳州特有的软滑
爽口的米粉,加上酸笋、木耳、花生、油炸腐竹、黄花菜、鲜嫩青菜等配料及浓
郁适度的酸辣味和煮烂螺蛳的汤水。因有奇特鲜美的螺蛳汤,使人吃一想二。

上世纪80年代初期,有几个外地商人途径柳州,饥肠辘辘,但已是深夜。
大部分的店铺都已经打烊,几位商人好不容易找到了一家马上就要打烊的米粉摊,
可是摊上已经没有什么吃食了,煮米粉必用的骨头汤已经没有了,只剩下一锅煮
螺剩下的螺蛳汤和一些零零碎碎的食材,还有一-些米粉。可是几位商人饥饿难
耐,恳求摊主随便做些东西给他们充饥,摊主情急之下把米粉放到螺蛳汤里煮,
又加上了青菜、油炸腐竹以及花生等配菜。无巧不成书,几位外地商人吃后,对
此赞不绝口,表示从未吃过这样的美食。说者无心,听者有意,摊主将此记在心
中,并逐步完善其配料和制作,遂慢慢形成了现在螺蛳粉的雏形。机缘巧合,满
足了饥肠辘辘的外地商人,也成就了日后风靡柳州的一款经典美食。

五色糯米饭Multicoloredglutinousrice
五色糯米饭,俗称五色饭,又称乌饭或花米饭,因糯米饭星黑、红、黄、紫、白
五种颜色而得名,是壮家用来招待客人的传统食品。

油茶侗族Tea-OilTeaofDongethnicminoritygroup
打油茶是侗族特有的一种饮食习惯。其主要原料是阴米。阴米都预先备制,
制法是:将糯米拌油或粗糠后蒸熟、阴干,再用碓臼舂成扁状,去掉粗糠。打油
茶时先将阴米拌河沙炒或油炸成米花备用。接着把配料花生、黄豆、芝麻等炒熟。
配料没有定规,时鲜瓜菜、猪肝、虾米都可以放,还可以放些葱花、姜丝等作料。
原料准备就绪后就煮茶水。放一把米在锅里炒到焦黄,再添上本地土制的上好茶
叶炒拌几下加水煮沸,滤出渣子。把茶水倒进盛着米花等原料的碗里便是油茶。
春节期间的油茶还要加两块手指宽的油煎糍粑。

侗乡人独创的油茶,具有浓香、甘甜的美味,常饮能提神醒脑,治病补身。
侗族老人喝不上油茶,责怪儿孙不孝。侗乡人外出串村走寨喝不上油茶,身子感
到发痧一样不舒服,赶紧回家打油茶。与侗族人民杂居起的苗、瑶、壮等民族,
受这种习俗的影响,也喜爱喝油茶。离开侗乡山寨到外地工作的人,嫁出去的侗
乡姑娘,仍喜爱打油茶。

侗乡人从哪朝哪代开始有喝油茶的习惯,无法考证。据侗族老人说,他们祖
祖辈辈种油茶树,家家户户榨有一缸一缸的茶油,“有油就可以打油茶了”。侗
族人民世世代代居住在高寒山区,喝油茶能御寒防病。习惯成自然,打油茶便成
为代代沿传的民族习俗了。
